Christmas Breakfast Casserole.

Breakfast Casserole is a tradition in our house on Christmas morning.  The first thing I do when I get up is pop the casserole in the oven.

Although this is a huge favorite,  I usually only make it once or twice a year.  I know it is early to be talking about Christmas, but this post isn’t really about Christmas . . .

My Daughter has been staying with us all summer after graduating from College.  She diligently applied for jobs in her chosen field and Mr. Hobby and I were so proud of her when she was hired for a position she was happy with.

With a job in hand, her next goal was to find a place of her own.  She took her time looking for the perfect place and when she found it, I knew that our time with her at home was limited.

Yesterday was moving day.  With the help of her boyfriend, my daughter and Mr. Hobby loaded up her furniture and belongings and away she went.

I know moving day is exhausting, so I offered to make her a breakfast casserole to pop in the oven later.   And, after losing two kids this week (my oldest son was dropped off at his dorm last weekend), I was wanting some myself.

If you follow this blog, you know that I am not much of a cook, but my family has always enjoyed this particular dish.  In fact, I don’t ever recall them telling me I burnt it.   Christmas spirit and goodwill towards Mom?  Probably.

The recipe is very simple and just takes minutes to prepare.  Of course you can add to it if you’d like. I always add a little chopped onion in mine and I use 9 eggs instead of the called for 6 in the recipe.

Ingredients:

Frozen Hash Brown Patties (enough to line the bottom of the dish)
6 eggs
1 cup milk
1-lb sausage (or meat of your choice)
Shredded cheese to cover the top

 

Christmas Breakfast Casserole.

Directions:

Line a casserole dish with the frozen hash browns.  Brown meat and drain.  Sprinkle meat on top of the hash browns.  (I sprinkle finely chopped onion too).  In a large bowl, whip the eggs and milk then pour over the top of the meat.   Cover and leave in the fridge until you are ready to bake.   They say it is best to prepare the night before, but I have made it in one evening and it tasted just the same.

Preheat oven to 350, cook uncovered for 45 minutes to an hour.  For the last 5 minutes – sprinkle shredded cheese on top until melted.  The original recipe called for cheddar, but we always use shredded Monterey Jack.

The  casserole was delicious and brought a few moments of comfort, but I am missing the kids already.   I know the next time I make this – they will all be here and that makes me smile.
