If you’ve been visiting us for a while, you probably know that Mr. Hobby is the cook in our family. Today I’m sharing one of his creations. Sausage & Egg Breakfast Skillet, or ‘Breakfast Stuff’ as we like to call it, is a meal that is not only great for breakfast, you’ll love it for dinner as well. My husband makes a lot of this because it’s great as leftovers as too. Just pop it in the microwave for a minute for a delicious quick & hot breakfast.
This recipe is easily modified to add more ingredients to suit your own taste. Enjoy!
Sausage & Egg Breakfast Skillet
- 4 med. Red Potatoes
- 1 small Onion, Chopped
- 3 tbsp Butter
- 1 lb Breakfast Sausage
- 8 Eggs, scrambled
- 1-1/2 cups Shredded Monterey Jack Cheese
- salt, pepper to taste
Add butter, potatoes and onion in a large covered frying pan, heat over low heat for 30 minutes stirring occasionally or until potatoes are soft.
In a separate frying pan cook breakfast sausage and drain.
Add cooked sausage and eggs to the potato/onion pan. Heat over med heat until eggs are done, stirring frequently.
Add cheese and continue stirring until melted.
Salt and Pepper to taste.
